Quigo, something more than just a cheese...

The Quigo cheese from WellDone Lácticos de Espartinas has won first prize in its category in the thirteenth edition of the GourmetQuesos contest held within the Gourmet Hall of Madrid. Among the cheeses in the category "with condiments inside", a total of five cheeses participated - as in the rest of the categories - with Quigo being the only Andalusian one.

Quigo es un queso elaborado sin molde con leche cruda de cabra florida de coagulación ácido láctica, y en su interior, un higo macerado. Es una receta del maestro quesero Rodolfo del Río, al frente de la quesería WellDone, que puso en marcha en 2016. Se dedican a la producción de queso de cabra muy autóctono y cuenta con otro queso repetidamente premiado, el Nordumani.

At the end of March, 100 finalist cheeses were selected from the 800 that were submitted to this competition, which selects the best in Spain. Quigo was among them, being tasted blind by a jury made up of 60 professionals from the cheese sector. In GourmetQuesos, first, second and third prizes are established for each category, which means a total of sixty winners.

Quigo, something more than just a cheese...

They are dedicated to the production of very indigenous goat cheese and have another repeatedly awarded cheese, Nordumani.

Del rebaño de cabras de Antonio «el cofra», en Castilleja de la Cuesta, obteníamos la leche. Ahora nos la suministra un ganadero de Bormujos, la cual ponemos en valor  por su excelente calidad, elaborando desde el ordeño y trabajando en crudo, con fermentos obtenidos de la propia leche, pagando un precio justo, muy por encima de la media.
