Thischeese, due to its size and presence, is one of the most requested. It takes its name from the Loreto monastery, located in Espartinas. With natural white flowery rind, buttery and friable paste, with lactic and acidic flavors when tender, becoming more pronounced when ripe, with goat and nutty flavors. Ideal to drink fresh as a starter. Afined, it pairs very well with Sacristia wines.

Toma el nombre de como llamaban los musulmanes a los vikingos (hombres del Norte) Un queso muy particular, debido al tipo de molde con que se hace, de desuerado mas lento. Con forma de tamboril, corteza pálida y moteada, desarrollada por el moho Penicilium Candidum al estilo francés, proteolizando una pequeña capa por debajo de la corteza, pareciendo rebosar de ella. Sabor delicado y distintivo, sutiles aromas a cabra y frutos secos, más tánico cuando se afina.

A fragile cheese when it is tender and whose creamy and floral flavor becomes more intense as it matures. Shaped like a wheel and the same size as the Aljarafe, its central space gives it a uniform maturity. Easy to cut and ideal to combine with a light and smooth white wine like Mirlo Blanco.

In ingot format, it goes from a sparkling white when fresh, to a natural flowery rind, with earthy and intense flavors, a soft and unctuous texture, a firm goat and nutty flavor. Pair it with a fortified florist wine such as Frasquito Reserva en Rama.

Soft, white, homogeneous and thin paste with fine floral rind of light gray to bluish gray color that reaches its full potential when maturing reaches 30 days. Its dry style and firm texture has a flavor elegant, almost sober. We recommend it with Petit Ocnos.

It is a Mothais-style cheese, shaped like a thick disk and wrinkled rind. The flavor is earthy and nutty, and with aging it becomes denser as the white and blue molds grow on the surface, lingering in the mouth with great intensity. The most refined ones combine very well with reds like Zancuo Petit Verdot

It is shaped like a squat cylinder. It takes its name from the famous Chevrotin des Aravis. Its rich, melting paste, its large natural surface mottled with white and blue molds, make it a superb cheese with intense aromas and its flavor is fragrant, with notes of dried fruits. When its texture is more refined, it is perfect to combine with full-bodied white wines, with red wines from the region or sparkling wines like Umbretum.

This cheese is completely manual, without a mold. It is a cheese without a noticeable rind, melting and creamy, with a very friable texture, with citrus aromas and a refreshing goat character, which houses a macerated fig heart in the center. This gives the cheese its sweet side as well as wild and vegetal notes. Ideal to drink with Florum vermouth.

Esta pirámide alta de tamaño, de 7 a 8cm de altura y un peso de 130-140gr. Con una corteza natural naranja, debido a la semilla de annetto y el oloroso con que se la baña, y blanca , fina y deliciosa que alcanza su pleno potencial cuando su afinado llega a los 20 días Su estilo seco y de textura firme posee un sabor elegante, casi sobrio, que combina perfectamente con vinos blancos secos de la zona de Jerez.
